1/3 cup margarine 1/2 cup chopped onions 1/4 cup chopped bell pepper (any colour) 1 clove garlic (or powdered) 2 cups sour cream 2 teaspoons lemon juice (more to suit taste) 2 teaspoons curry powder 3/4 teaspoon salt 1/2 teaspoon ginger (powdered or fresh) dash chili powder dash black pepper 3 cups cooked shrimp - sliced or chopped
- melt margarine - add onion, peppers and garlic - cook until tender but not brown - Stir in sour cream, lemon juice and all of the seasonings, mixing well - add shrimp and cook over low heat until hot through
- serve over rice
