3 aubergines - cut in chunks 3 courgettes - cut in thick slices 3 large beef tomatoes - skinned and roughly chopped 3 red bell peppers - cut in chunks 3 large onions - cut in thick slices 3 garlic cloves - crushed
3 - 6 tablespoons olive oil
- simmer all together, mixing well, for about 30 minutes.
- season with salt, pepper and thyme (optional)
Serve hot or cold.

There are so many recipes for Ratatouille but this is an easy one to remember, everything being in threes.
I make it up according to what I have to hand, so it differs every time. If I don't have red bell peppers, then I use yellow or green. Sometimes I use tinned tomatoes as the flavour is better, especially in the winter.
I usually make up a big batch of it and then freeze some in portions.
