1 orange 10 cloves 3 bottles Burgundy 10 tablspns rum 3 tablespns clear honey 3 tablespns demerara sugar a few orange slices stuck with cloves cinnamon sticks
- press the cloves into the whole orange and then place in a moderate oven (200°C) for 1/2 hour
- pour wine into a large bowl over a pan of steaming water, keep over heat until thoroughly heated
- add rum, honey and demerara sugar, stir for 2-3 minutes
- remove orange from oven, put it in the punch
- heat gently for further 5 minutes
- put in punch bowl or in a mixing bowl, float the orange slices on top
- serve in mugs or thick glasses with cinnamon sticks
Makes about 16 glasses
