350g mixed dried fruit 125g butter or margarine 175g soft brown sugar 225g flour 1 teaspoon baking powder pinch salt 2 eggs, beaten 225g chopped pineapple, drained 125g glace cherries, halved
- put the mixed dried fruit into a large bowl and cover with boiling water
- set aside to soak for 10 - 15 minutes, then drain well
- melt the butter or margarine and sugar in a saucepan and heat gently
- add the drained dried fruit and cook over a low heat, stirring frequently, for about 5 minutes
- set aside to cool
- sift the flour, baking powder and salt into the dried fruit mixture and stir well
- add the eggs and mix thoroughly
- add the pineapple and cherries to the cake mix
- put into a greased loaf tin and level the surface
- bake in a preheated oven at 180°C for about 1 hour

I have this recipe from my cousin in England and it is a super one. Put it in a tin once it has cooled and it stays fresh for days on end - if you haven't eaten it up by then!
