75 g margarine 125 g sugar
2 eggs
225 g plain flour 1 teaspn baking powder 1/2 teaspn bicarbonate of soda 1/2 teaspn salt
3 medium very well-mashed ripe bananas
100 g chopped pecans or walnuts
- cream together margarine and sugar
- add beaten eggs and beat well
- sift together dry ingredients and add to creamed mixture, alternately with bananas
- stir in nuts
- pour into a greased loaf tin
- bake at 175°C for about 60 - 65 minutes
- remove from tin and cool on rack
This cake freezes well.
This moist cake is the favourite in our family, they can't get enough of it!
