1 garlic clove, finely chopped 1 small onion, finely chopped
- sauté in
1 tablespn oil
- set aside to cool
1 bunch of flat parsely, chopped
- add to cooled garlic and onion mix
500 g beef and pork mincemeat 2 tablespns fine breadcrumbs 1 egg, beaten, with some added milk
- mix well, then add
rind of 1 unhandled lemon, grated
Make into meatballs and fry gently until done.
Taste good both hot and cold.
The parsley and lemon rind do wonders for otherwise ordinary and boring meatballs. Great for party buffets as you can make them the day before.
