This is the recipe we tried the other day.
2 Large potatoes finely grated (370g), 2 Large carrots finely grated (400g) 6 Spring onions chopped, 2 tbspn chopped fresh parsley,1/3 cup skimmed milk,2 eggs lightly beaten, 2tbspn wholemeal plain flour, 1 tspn ground cumin.
Rinse the grated potato under cold water then squeeze out as much liquid as possible. Put all the ingredients in a bowl and mix really well.Heat a lightly oiled pan and drop in 2 tblspns of mix cook over the heat for about 5 mins each side until veg are tender and the outside is crisp and golden brown. There is no salt or pepper in the recipe so I just added it with everything else. They are not suitable for freezing.

That sounds good letitia, I might try it with mashed potato instead as we don't like the messy business of grated potato, we tried that last year and said never again. As it happens we have some frozen mashed potato that was given to us so might use that. Thanks for the recipe letitia, looking forward to it!
