Applesauce Cake - #1
Cook Time: 50 minutes
Total Time: 50 minutes
Ingredients:
2 cups all-purpose flour, sifted before measuring
1 cup sugar
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
2 teaspoons baking soda
1 cup raisins
1 cup chopped walnuts
1/2 cup melted butter
2 cups applesauce
Preparation:
Directions for applesauce cake.
Into a mixing bowl, sift together the dry ingredients. Add raisins, chopped walnuts, melted butter, and applesauce. Beat until well blended. Pour batter into greased and floured 9-inch square pan or 11 3/4 x 7 1/2 baking pan. Bake at 350° for 45 to 50 minutes. Cool and spread with cream cheese or butter frosting. If desired, decorate applesauce cake with grated orange peel and walnut halves.
This is the cake that I've made twice.
The first time the self-made applesauce was slightly runny and I used half raisins and half sultanas. I didn't have any ground cloves so I used ground ginger instead. I don't have a 9" square pan, just an 8" one, so the baking time was increased by about 15 minutes. This cake was very moist, almost soggy/heavy , but it tasted really good.
The second time the self-made applesauce was thick (a bit too thick?) and I only used ¼ of the dried fruit. This time only sultanas. Oh, and I put 4 cloves in with apples when I stewed them. I thought this one was a bit on the dry side, but Peter thought it just as good as the first one.

Total Time: 1 hour, 5 minutes
Ingredients:
1/2 cup shortening
1 cup light brown sugar, firmly packed
1 cup applesauce
2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon allspice
1 cup chopped walnuts or pecans
Preparation:
Line bottom of a 9 x 5 x 3-inch loaf pan with greased wax paper; grease sides. Cream shortening; add sugar gradually, beating until light and fluffy. Add applesauce. Sift together dry ingredients; add to creamed mixture. Fold in chopped nuts. Pour into prepared loaf pan. Bake in preheated 325° oven for about 55 to 65 minutes. Cool for 5 minutes then turn out onto rack and peel off paper. Frost with Cream Cheese Frosting or your favorite icing.
I just discovered this recipe so have not tried it out yet. The good thing is that both are made without eggs. I didn't put any frosting on either of them. Oh, and, of course, since they don't have SR flour over here, I used plain and added 1 teaspoon of baking powder.
