Arney's Apple, Cinnamon and Sultana Cake 1. Measure just over 8oz SR flour into a bowl. 2. Add approx. 1 heaped teaspoon Cinnamon. 3. Chop peel and core large cooking apple (or more if you wish) into Sultana sized pieces, then mix in flour to retain colour. 4. Whisk 4 oz. Soft Brown Sugar and 4 oz. Stork Margarine or similar. 5. Add 2 beaten eggs and mix well. 6. Add 4 ozs Sultanas to the flour/apple mix and add to mixing bowl and mix well. 7. Pour into a loaf tin and sprinkle top with Demerera Sugar and cover with greased greaseproof paper. 8. Cook in fan oven @ 160 deg. C for 45-55 mins. (if using rounder/flatter tin, 35 to 40 mins. should do it.)

That sounds not only scrummy but easy as well . . . . . . the kind of recipe that I like. I'll definitely try this one out.
