This is an adapted Quick Brown Bread Recipe which I tried last week 700g/11/2lb strong brown flour, 2 teaspoons salt, 1/2 teaspoon caster sugar, 7g easy blend dried yeast, 450 ml/3/4 pt warm water, Optional 1 small packet of mixed seeds (poppy, sunflower, pumpkin ,linseeds. sesame seeds) Pre heat the oven tob 200 deg C, 400deg F or Gas Mark 6 15 mins before baking. Oil 2 x 450/1lb loaf tins Sift flour salt and sugar into a large bowl adding any bran left in sieve. Stir in the yeast and seeds if using them9 reserve a few for the top) making a well in the centre. Pour warm water into the dry ingredients and mix to a soft dough adding more water if needed. Knead on a lightly floured surface for 10 mins until smooth and elastic shape into 2 loaves put into tins and cover with oiled cling film. Leave in a warm place for 40 mins or until risen to the top of the tins. Glaze with beaten egg and seeds or dust generously with plain flour. Bake for 35 mins until well risen and lightly browned. Turn out of tin and return to oven for 5 mins to crisp the sides. Cool on a wire rack.
