Turkey & Bean Chili (serves 8) but we only got 4 meals out of it.
1 pound ground turkey breast
1 large onion, chopped
2 bell peppers, chopped
4 cloves garlic, minced
3 tablespoons tomato paste
2 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon dried oregano
1 teaspoon salt
1 large sweet potato, diced
1 can (14 oz) diced tomatoes
1 can (14 oz) chicken broth
1 chipotle chile pepper in abode sauce, minced (optional)
2 cans (15 oz each) mixed beans for chili, rinsed and drained
1 zucchini, chopped
Directions:
1. In a large pan or saucepan cook the turkey, onion, and bell peppers over a medium-high heat stirring frequently for 8 minutes or until the turkey is cook through. Add the garlic, tomato paste, chili powder cumin, oregano and salt and cook stirring constantly for 1 minute.
2. Add the sweet potato, diced tomatoes (with juice), chicken broth, and chipotle chile, if using. Bring to a boil. Reduce the heat to low and simmer, covered, stirring occasionally, for 30 minutes.
Stir in the beans and zucchini. Return to a simmer. Cover and simmer for 30 minutes longer, stirring occasionally, or until the flavours are well blended and the vegetables are tender.
Calories 238 per portion. (about 476 kcal per serving for only 4 meals)
