I had a baking afternoon so thought I would share my recipes with you ...
These are like English scones but savoury not sweet.
Buttermilk Biscuits
2 cups all-purpose Flour
2 1/2 tsp Baking Powder
1/4 tsp Salt
1 tsp Sugar
1/3 cup Butter (cold)
1 cup Buttermilk (cold)
Pre-heat oven to 200c.
In a bowl combine flour, baking powder, salt and sugar. Cut up the butter and rub into the flour. Add the buttermilk and mix till just moistened. Turn onto a lightly floured surface and knead with floured hands for one minute ... do not over-handle the dough.
Form into a roll and divide mixture into 8 portions and roll into a ball in the palm of your hand. Place on a greased or non-stick baking tray and press down lightly.
Brush with a little buttermilk and bake for 10-12 minutes or until golden.
Enjoy hot with butter and jam or with sausage and / or bacon.
Cheese & Onion Buttermilk Biscuits

1/4 tsp Cayenne
1/2 cup Butter (cold)
1/2 cup grated Cheddar Cheese
1/2 cup dried Fried Onion Bits
1 cup Buttermilk (cold)

In a bowl combine flour, baking powder, salt, sugar and Cayenne. Cut up the butter and rub into the flour. Mix in the cheese and onion bits. Add the buttermilk and mix till just moistened. Turn onto a lightly floured surface and knead with floured hands for one minute ... do not over-handle the dough.
Form into a roll and divide mixture into 8 portions and roll into a ball in the palm of your hand. Place on a greased or non-stick baking tray and press down lightly.
Brush with a little buttermilk, sprinkle some cheese and onion bits on the top and bake for 10-12 minutes or until golden.
Enjoy hot with butter and with sausage and / or bacon.
