Recipe from the 'Chat Magazine' Sweet Potato & Pepper Bake: PRINTABLE RECIPE: www.freewebs.com/dagsstudio3/Sweet%20Potato%20&%20Pepper%20Bake.pdf1. Cut 450g peeled sweet potatoes into wedges. Place in an ovenproof dish, drizzle with 2tbsp olive oil and season. Then bake at 200c/Gas mark 6 for 10 min. 2. Meanwhile, cut a red onion into wedges, and a red pepper into chunks. Stir in with the wedges and return to the oven for 15 mins. until the veg is tender and lightly charred. 3. Beat six eggs with a little salt and pepper and pour over the veg. Sprinkle with 50g grated Cheddar, return the oven for about 15 mins, until the egg is set. Slice and serve with salad. Serves 4 Cost per head: 88p
