Since I always use the special Dr Oetker jam-making sugar, I've tried to work it out how to make jam using just plain sugar and adding pectin. 1 kg pumpkin - peeled, deseeded and cut into small chunks 200 ml orange juice (freshly squeezed or a good store-bought one) 500 g sugar pectin - how much? ?? Optional - if you like ginger as we do, add 1-2 tablespoons of finely chopped or grated ginger. Put all into a large pot, bring to the boil, then reduce heat and simmer for about 45 minutes. Stir often so it doesn't stick to the pan. When somewhat reduced, put into sterilized twist-top jars, stand jars upside down for 5 minutes. Then stand upright in a thick towel overnight. Make sure they are not in any draft.

I bought a nice pumpkin two days ago and am going to make a couple of batches of this jam this coming week.

Something got to our pumpkins this year, not sure what. I know it wasn't squash bugs. I noticed a local pumpkin farmer had a lot of dead vines in their field too. So I will have to buy some. Hoping I can find them. We couldn't find any canned pumpkin at the store when we went shopping. I asked a lady I know that works there and she told us that they didn't have any and no one had any idea when they would either. Then she whispered real quiet that she had two cases of organic pumpkin hidden in the back if we wanted any. We bought one case. It was like pumpkin under ground. Hopefully it won't be as difficult to find whole pumpkins.
