We have re-discovered our local butcher. And we are very glad we did. After many years of supermarket meat and bacon slowly getting worse, the quality change is amazing. Today we have bought a slow cooker to try all those favorite meat recipes just like momma used to make. Before we use it has anybody any does and donts and favorite recipes? Assuming of courseyou us a slow cooker !

Arney uses a slow cooker a great deal and been using for years.
She normally cooks all the main meat joints, chickens etc., so that it all fall off the bone, we can't stand red uncooked meat and like our meat fairly well done but not dry.
I will get Arney to post up about this as it is her favourite cooking method.
In the meantime I did the Beef Goulash/Gnocchi recipe in the Recipe section (Main Meals).
Our local butcher has just closed down but we never used him to be honest.

Instructions from Arney -
Beef Goulash example:
Brush slow cooker bowl with oil (very meanly).
Place braising steak and pre-fried onions in bowl (we don't seal the steak first as there don't seem any need).
Roughly cover the meat with water (condensation builds up so don't need too much).
If starting the day before, cook for 4 - 6 hours on Auto or as desired.
Next day, take off any fat that has set (usually very little), add the hot paprika or any flavourings as desired, give a good stir and cook again for 2 - 4 hours on Auto. We like our meat to melt in the mouth.
Whole chickens:
Starting with the oil, brush the chicken and add any flavourings etc., and add about half a cup of water, cook for 3 - 4 hours on Auto.
One snag is you don't get crisp chicken but bones can just be pulled out where it is so tender. Crisp under grill if desired.
Joints of Meat:
Cook all joints approx. 4 hours. We do like Knorr gravy flavourings and add these to the liquid about half way through.
General note: Try not to lift the lid as much as possible but give it a good stir about half way through, each time.
These timings are for our slow cooker (Aldi with glass lid) yours may be different.
