 PRINTABLE VERSION: www.freewebs.com/dagsstudio3/Pork%20Loin%20with%20Mustard%20&%20Creme%20Fraiche.pdfGot this recipe from the Waitrose Advertising paper, tried it yesterday and it was delicious: Pork Loin with Mustard & Creme Fraiche (serves 4) ---------------------------------------------------------------- Pan fry 4 pork loin steaks for 15-18 minutes turning occasionally until golden. Remove from the pan and set aside on a warm plate. Add a sliced small red onion to the pan and fry for 2 or 3 mins. only. Remove from the pan and set aside with the pork. Reduce the heat to low and add 2 tablspoons of Wholegrain mustard and 200ml of half fat creme fraiche. Using a wooden spoon work the mustard and creme fraiche together then return the onion and the pork to the pan with any juices. Heat through then serve with new potatoes and baby leaf greens. The Waitrose recipe called for wholegrain mustard with sundried tomatoes, which we did buy but doubt if that made any difference. |

This sounds like something my family would love. I did have to google half fat creme fraiche to find out what that is. Not sure if I can find it or not but I will look. There is a failry large mexican population in these parts thought and from what I found on my search, there is a comparable mexican cream so if I can't find the first I may be able to find the latter.
Then I 'm going to have to work outwhat 200ml measures out to in U.S. measurements.

I would think you could get away with substituting yoghurt or sour cream for creme fraiche, might need a pinch of sweetener. The 200ml is only approx. and is almost exactly 7 fl. oz. |

I wouldn't use yoghurt (and not just because it's something else I don't like!) but it's just not 'creamy' enough. Have substituted yoghurt for creme fraiche before and it always has a sour taste and takes over in flavour. I always use soured cream OR single cream which is just gorgeous, but worse for you, of course. |

I agree with Claire about the yoghurt not being creamy enough and sometimes leaving a sour taste. Have tried that a couple of times and don't like it.
Sour crean is good and, as you know, you can get that in all supermarkets over there, Audra.
Single cream, I use the unsweetened sort for various things. That is what I use for making whipped cream, as you've seen DAG and Arney, but it is excellent for in sauces, like the one above, in one of my cream cakes blended with sour cream, even in coffee, .......
Never mind it being worse for you, Claire, enjoy a bit of sinning now and then. ;D

I think single cream is a lighter sort and heavy whipping cream would be double cream - I think.  |

VERY TASTY !!!!!!  Ann used double cream (thats what was in the fridge) she also added a few mushrooms, once again because they were there. Not good for the waist line but never mind ;D ;D |

Glad you enjoyed it Alfie and Ann, double cream does sound very naughty indeed! I reckon that a good way to die would be to drown in a tank full of that sauce and the good news is that we have the other half again today!  |
