I know this is one of Sis's favourites from me ...
Take equal quantities of the 'cream cheese' in two cheeses of your choice grated ... a sharp Island cheese and a Gouda or perhaps goats and a nutty cheese ... the taste is to your palette but it must be three and one must be 'cream cheese'.
Mix the three together and then add a dollop of English mustard, French mustard or Horseradish Sauce ... again your choice. Mix well.
Roll into a ball or log. Roll in chopped nuts or seeds or crushed mixed peppers yet again of your choice and wrap in foil or clingfilm and refrigerate.
Serve to friends when they come for drinks or take as a gift to parties ... last year I decorated with bay leaves and berries to be festive and took to an afternoon Christmas party with a nice box of crackers.
Sis may wish to add her varieties as I know she has experimented with this.

It is all as Sis says, according to your taste and it is so easy and quick to make, too. Make it ahead of time and keep it in the fridge until about a half an hour before you serve. Delicious. I've made it several times when we've had guests over for cheese and wine in the evening. I make up one portion and then divide it, adding horseradish, curry, chilli powder, etc, to have a variety. I wasn't keen on the curry, although I do like curry, but others said that it was particually good. I have also added a little milk to it sometimes to make a lovely dip.

We enjoyed it when we were on holiday at Kedi's in December and Arney made it up today and it is lovely! Red Leicester Strength 5, Small amount of Leerdammer mature, and 2 tubs of Waitrose cream cheese. We used English mustard and put a bit extra in to give it a real kick!

DAG, why didn't you telll me this earlier and we could have enjoyed it with you ... loved the mix you did ... although Jim would have preferred hot horseradish to English mustard ...
I'm doing pasta for Jim in a mo and Chinese spring rolls for me (since I missed out on them yesterday).
