I just could not think what to do for dinner last night. Then decided to do my own pasta dish . I boiled pasta any past would do that you have in a veg stock till soft. In wok a little olive oil I sauted courgette, onion, tomatoes, red pepper or what you have at hand ,fresh chilli and some chilli sauce for added flavour And chopped some smoked ham to add . Add pasta with veg stock to sauted veggie to simmer away. My own recipe no book.

That does sound good, and easy and quick, too. The kind of thing I like.
Barring the courgette, I have everything here, so shall get it and do that for lunch this coming week.

Photo taken just before the onion was added. Tried it today scotkat and Arney did a wonderful job, used up some macaroni, courgette, broccoli, bacon, onion (sauteed in veg. stock) 1 fresh chili but will make it 2 next time. Cooked the macaroni in veg. stock and used up some creme fraiche. It made enough for 4 so will have the rest tomorrow! ;D This will be a regular from now on I think and of course there are unlimited variations with whatever stock you have.
