It was a surprise to Mrs.DAG as well, because it all went wrong and only discovered this by accident today! But probably a much healthier substitute for roast potatoes, and this will be used regularly from now on. Use any quanity as appropriate.
Peel and slice potatoes and onion to approx. a quarter of an inch thick (6-8mm) and in the same pan bring both to the boil.
Simmer for about 5 mins. but it is important to remove from heat before potatoes start to break up.
DRAIN WELL.
In a large frying pan melt olive oil and butter (just enough to generously coat base of pan).
Fry gently, but not turning potatoes until one side is cooked so they don't break up. Then turn and cook until nice and golden.
Make up a mug full of chicken stock, pour over potatoes and onion, turn heat up so it is bubbling and until the liquid is just absorbed.
Serve immediately.

It sounds good, and I shall definitely try it out after we get back from Cyprus.
DAG, you just told me that you liked it cold as well, even though you don't normally like cold left-over hot meals. Also that it would go well with cold meats and pickles.
So, it could be substituted for your usual potato salad for a change.

I suppose so, not sure about that combination, but I would like to add that Linda used the liquid chicken stock from a supermarket, not the normal stock cube and boiling water. Might make a difference, don't know!
