Parsnip ,leeks, potato or sweet potato ,carrot.
Amount of above veggies depends of amount to feed.
Sweat veggies till soft then add seasonings eg salt and pepper .
And veggie stock 2pints or more.
Boil till soft add fresh parsley at end .
Serve with crusty bread and enjoy.

Made it yesterday but should have made a bigger pot was so tasty.Your wellcome hope you enjoy.
Squash soup good as well .

Just used the last parsnip up yesterday (roast beef, yorkies, roast parsnip ..............) so have to buy some more.
We love squash (zucchini / courgette) soup, I make it a lot. I put red lentils in it, got the recipe from shiney on GC two years ago - delicious!

Oh that sounds good scotkat, reminds me that Mrs.Dag has started making a beautiful roasted butternut squash soup that my daughter supplied the recipe for. I will post it up shortly when she gives me the details.
