1 large tin of green beans, drained 1 large onion, sliced 1/2 cucumber, sliced 3 tablespns oil 4 tablespns herb vinegar 4 tablespns sugar salt & pepper to taste
Toss together and let stand for several hours before serving.
This salad might sound rather yuk but it is one that is liked by everyone.
I always make it the evening before needed, this gives it a chance to really marinate.
I mix the oil, vinegar, sugar and salt & pepper together first so that it is all mixed well, then I add the beans, onion and cucumber. It also prevents the beans from getting mashed by too much mixing.
It goes with all BBQ meats, fish dishes, breaded cutlets, etc.
