Layered Ham and Cheese Comfort Food: Serves 4 12 slices of thin sandwich bread 8 cheese slices of your choice 1 large leek sliced (or green onions) 8 thin slices of cooked ham approx. or as available. 4 eggs lightly beaten 1 cup of milk (depending on container used, make sure all bread has soaked with the liquid mixture) 1 tsp dry mustard 1 tsp paprika 1/2 tsp Worcestershire sauce, (will use more next time) 1/4 tsp white pepper 4 slices of tomatoes optional to decorate on top. 2 tbsps minced parsley (optional) 1. Place 4 slices of bread in a 13 x 9 inch baking pan or dish. 2. Top with 4 cheese slices, half of the leeks or onions, and half of the ham. 3. Top with 4 slices of bread, 4 slices of cheese and remaining leeks/onions and ham. 4. Top with 4 slices of bread. 5. Combine eggs, milk and seasonings. 6. Pour over the layers and leave to soak in for half an hour at least. 7. Place small knob of butter on top of each visible slice if not using tomato. (optional) 8. Bake at 180 C fan oven for approx. 45 mins. or until nicely browned on top. Note: Top each top bread slice with a tomato slice (if using) during the last 20 minutes in the oven.

Tried this for lunch on Saturday, it tastes every bit as good as it looks. We've had two requests for the recipe so far.

Next week, folks, next week and then I'm going to make it as well. We are eating up all the various bits and bobs in the fridge first.

Glad you enjoyed it Alfie, yes if the cold weather keeps up like this I think we will be having that again soon as well.

We had this for supper this evening and it was quite nice. I didn't have any ham so I used salami, which was a good substitute, but I shall get ham the next time.
